What started as an innocent desire to shed some weight, turned into an obsession with counting calories, regular weigh-ins, over-exercising, and shame-filled binging. If you asked anyone, they would describe me as a dedicated health enthusiast—but I was far from healthy.
Instead of achieving the results I was so desperate for:
I damaged my metabolism
I messed up my digestion
I was exhausted all the time
I was stressed, sad, and isolated myself
This went on for YEARS. It wasn't until I was DESPERATE for a new way to treat my body, that I shifted my mindset. Instead of focusing on ways to DEPRIVE my body- I wanted to know how I could NOURISH it. This mindset shift was LIFE CHANGING.⠀⠀⠀⠀⠀⠀⠀⠀⠀
That' because people make changes in their life for one of two reasons: Inspiration or desperation.⠀⠀⠀⠀⠀⠀⠀⠀⠀
I was finally desperate enough to admit what I was doing was not benefiting me and even more important was not HEALTHY for my body, mind or spirit. I discovered Intuitive Eating and I learned how to nourish my body through food, movement and mindset, regardless of what the scale said.
With my training as a Holistic Nutritionist and Intuitive Eating Coach, it has been made clear that I was a victim of diet culture, and it's my goal to ensure I spread the message of taking care of our bodies, regardless of weight, and dispel the myth that health "looks" a certain way.
This is why I created The Food and Body Confidence Project!

I am a Registered Holistic Nutrition Practitioner and Intuitive Eating Coach with a Bachelor degree in Public Health Education. She is also a Licensed Body Positive Facilitator and provides support in both group and one-on-one settings in order to dispel the myths of diet culture and reinforce a holistic, health-focused approach, instead of a weight focused approach. She began Katie Valley Wellness in 2018 as a way to share her passion with others while providing motivation and support to those on their own Intuitive Eating journey. She is an adjunct professor instructor for Life Long Learning Classes at the local college, and has also partnered with Fieldstone Counseling and Wellness Center.
